Easy Cheesy Zucchini Casserole A
great way to use the zucchini you purchased from the Superior
Downtown Farmers’ Market. Easy to prepare and even the
non-zucchini lovers will enjoy it.
Ingredients
1 C. mayonnaise
1 onion, minced
1 egg
Dash salt and pepper
1 C. shredded sharp cheddar cheese
1/4 C. Parmesan cheese
3 medium zucchini, diced, no need to peel
Directions
Mix all ingredients in a bowl. Place in greased casserole
dish. Sprinkle with dry bread crumbs. Bake at 350 degrees for 30
minutes, covered.
Uncover and bake an additional 30 minutes. Serve hot.
I have made this with a combination of potatoes and zucchini. I
just added additional seasonings like garlic and a little dill
weed and increased the amount of cheese a little as well as added
a little milk (or sour cream) to make it creamier. |
